Mango Fried Rice
Let’s start with our first recipe, the Mango fried rice made of raw Mango. Yes, raw Mangoes too are extremely tasty and can be used in different dish preparations.
Ingredients
- 1 Raw Mango
- 2 Cup Cooked Rice
- 3 Green Chilies
- ¼ teaspoon Turmeric Powder
- Pinch of Asafoetida (Hing)
- Salt as per taste
- ¼ teaspoon Fenugreek seeds
FOR TEMPERING
- Oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Cumin Seeds
- 1 tablespoon Split Bengal Gram (Channa Dal)
- 1 tablespoon Peanuts
- Few Curry Leaves
Method
- Separate the cooked rice with the help of a fork and keep it aside.
- Wash and peel the raw Mango. Grate the raw Mango with the help of a grater and set it aside.
- Now place a pan on your Vortex gas hob 490. Keep it on a medium flame. Heat oil in the pan.
- Add mustard and cumin seeds and allow them to sputter.
- Add the Bengal gram and peanuts and fry until the dal turns light brown.
- Now, add the chilies, curry leaves, and sauté once.
- Next, add grated Mango and stir-fry for 2-3 minutes.
- Add turmeric powder and 1/2 teaspoon Salt during stir-frying Mango.
- Switch off the flame.
- Now add the spread of cooked rice to the pan.
- Add salt and mix it thoroughly.
- You can add potato slices if you like.
- Serve hot.

- Take fresh juicy Mangoes.
- Remove the skin and separate the flesh.
- Chop the Mango flesh into small pieces and freeze them overnight.
- Take these overnight frozen Mangoes and thaw them for 5 – 10 minutes.

Ingredients
- 150 gms white chocolate
- Alphanso Mango puree
- 200 ml cream
- ¼ teaspoon cardamom powder
- ½ teaspoon rose water
- Pistachio, almond, dry rose petals, and Mango & pistachio sponge for garnishing.
Method
- Melt the white chocolate along with cooking cream.
- Add Mango puree, cardamom powder, and rose water to the mix.
- Whip gently.
- Pour this mix into a bowl/can and refrigerate it for 20 minutes to cool it down in your Hafele’s Azzano Refrigerators.
- After 20 minutes, put the mixture in a kulfi mold and freeze it for 1 hour until the top layer is frozen.
- Make sure only the top layer is frozen, but the inside is still liquid.
- Serve this in Mango Kulfi snowball along with the garnishing.
