Tricolor Veg Biryani
Biryani in itself is a blend of exotic Indian spices and the traditional Indian way of cooking. But what makes it genuinely Indian is the slender-grained aromatic Basmati rice unique to the Indian subcontinent.
Let's start our meal preparation with our first dish, authentic Biryani filled with rich aroma!
Ingredients
- 1 cup basmati rice
- 3 tablespoon ghee
- ½ teaspoon cumin seeds
- 1 large onion
- 2 green cardamoms (use the powdered pods)
- 1 bay leaf
- 4 cloves
- 2 Black pepper
- ½ inch cinnamon stick
- 2 carrots
- 1 cup frozen green peas
- Water as needed
- Food color green & orange
- Cashew nuts, almonds, Kesar, and pista (fried in ghee)
- Salt as per taste
Method:
- Chop carrots and onions in your Hafele Klara Highline Pro Kitchen Machine.
We need even shaped stokes of carrots which can be perfectly done with the chopping function of Klara Highline.
Its various blade configurations provide flexibility in chopping vegetables in even shapes and sizes, unlike manually chopped veggies which might be uneven.
Its unique defrost mode gives you three different levels of thawing. You can choose the right model of thawing for:
- Vegetables / Fruits
- Fish
- Chicken / Meat
- Once we are ready with all this basic preparation, heat ghee in a deep pot sufficient for your Biryani.
- Add cumin seeds, powdered cardamom pods, cloves, and bay leaf, and sauté for a while
- Add the onions, carrots, and peas one by one and fry
- Add basmati rice and salt and mix well while frying
- Add water as needed and let the rice cook as normal
- Meanwhile, take 1 tablespoon. of water or milk each in two separate bowls and add one drop/pinch of green food color in one bowl and orange food color in the other. Dissolve properly.
- When rice is half-cooked, pour the above color solutions from opposite sides over the rice, and let it cook thoroughly.
- Once done, mix well and garnish with the dry fruits and serve!
Tricolor Barfi
After the spicy Biryani, let's make a sweeter traditional Indian coconut barfi. This tricolor barfi represents the color combo of our national flag.

- Divide the mixture into 3 equal portions
- To one portion, add green food color. Add orange food color to the second portion, and mix both separately.

- First, add the green-colored portion and spread with a spatula evenly
- Second, add the layer of the uncolored plain portion over it as softly as you can
- Spread the orange-colored portion over the top
- Make sure you don't disturb the other layers
