Let's start with a traditional Chaitra Navratri fast recipe with a modern and healthy twist: Sabudana Vada but Baked!
Baked Sabudana Vada
Sabudana Vada is a popular snack made with tapioca pearls, potatoes, and spices. To make a healthier version, you can bake the vadas in the oven instead of deep frying them.
Ingredients
- 1 cup sabudana (tapioca pearls)
- 3/4 cup boiled and mashed potatoes
- 1/4 cup roasted and crushed peanuts
- 2 green chilies, finely chopped
- 1 teaspoon of ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon salt
- 1/4 teaspoon black pepper powder
- 1/4 cup chopped coriander leaves
- 2 tablespoons of oil
Method
- Soak the sabudanas in water for 4-5 hours or overnight until they become soft and tender. Drain the water and set it aside.
- Take your Klara Kitchen machine from Hafele and add the soaked sabudana, boiled and mashed potatoes, roasted and crushed peanuts, chopped green chilies, ginger paste, cumin seeds, salt, black pepper powder, chopped coriander leaves, and oil. Mix well!
- Now, preheat your J34MWO PLUS convection oven to 350°F. Grease a baking sheet with non-stick cooking spray or oil.
A convection oven enables cooking in an even manner because of the air circulation. This has been made possible as the fan circulates the air so there is no portion of the oven that is too hot or too cold, which is common in conventional ovens.
- Using your hands, shape the sabudana mixture into small balls and flatten them slightly to form a patty. Place them on the prepared baking sheet.
- Bake the sabudana vadas for 15-20 minutes or until they turn golden brown.
Serve the sabudana vadas hot with your favourite chutney or sauce. Enjoy!
Singhara Poori
Next in line is yet another traditional Ramanavami special recipe, Singhara Poori.
Ingredients
- 1 cup Singhara flour (water chestnut flour)
- 1/4 teaspoon salt
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon red chili powder
- 1/4 cup water
- Oil for frying
Method:
- Mix the Singhara flour, salt, cumin powder, coriander powder, and red chili powder in Hafele's Klara highline pro kitchen machine. Mix well.
- Gradually add water to the mixture, kneading the dough as you go. Kneading dough in a kitchen machine makes it smoother and more elastic.
- Divide the dough into equal-sized balls. Roll each ball out on a floured surface using a rolling pin until it's about 3 inches in diameter.
- Heat oil in your Hafele's Sauve 01 deep fryer until it reaches 350°F.
- Carefully place the rolled-out pooris into the hot oil. Fry each side for about 30 seconds or until the poori is golden brown and puffy. Use a slotted spoon to remove the pooris from the oil.
Hafele's deep fryer is equipped with an oil temperature lamp set by a thermostat and an Oil Temperature Control function that allows you to control the temperature of the oil so that food cooks to the appropriate temperature.
- Place the fried pooris on a paper towel-lined plate to absorb any excess oil.
- Repeat the frying process with the remaining pooris.
Serve the Singhara poori hot with your favourite curry or chutney.
Sama Rice Idli
Our last recipe is Sama Rice Idli, which is a tasty twist to the traditional Sama Rice cooked on fasts. Let's check it out!
Ingredients
- 1 cup Sama rice (barnyard millet)
- 1/4 cup urad dal (split black gram)
- 1/4 cup poha (flattened rice)
- 1/2 teaspoon fenugreek seeds (methi dana)
- Salt to taste
- water as required.
- Oil or ghee for greasing the idli plates.
Method
- Rinse the Sama rice, urad dal, and poha separately in water and soak them in enough water for at least 4 hours.
- After 4 hours, drain the water from the soaked ingredients and transfer them to your Hafele's Glamline Pro mixer & grinder.
- Add fenugreek seeds and grind them to a smooth batter. Add water as required to make a smooth and thick batter.
- Transfer the batter to a large bowl, add salt to taste, and mix well. Allow the batter to ferment for 6–8 hours or overnight, depending on the temperature in your kitchen.
- Once the batter has fermented, mix the batter well once before you use it.
- Preheat your J34MCST combi steam oven to 375°F. Grease the idli plates with a little bit of oil.
Hafele's combi ovens allow you to cook around 4 times faster than traditional cooking methods. Steam penetrates deeper into food, removing excess fat and salt while locking in more of the beneficial nutrients your body thrives on. Cooking with steam is also the gentlest method of cooking, preserving foods natural colours, flavour and textures.
- Pour the idli batter into each of the idli moulds, filling them about 3/4 full. Place the idli plates into the combi steam oven and close the door.
- Select the "Steam" function on your oven and set the cooking time to 10–12 minutes.
- Once done, allow the idlis to cool for a few minutes before removing them from the moulds.
Serve the idlis hot with chutney and sambar.
Note: The cooking time may vary depending on the size and quantity of the idlis. Adjust the cooking time accordingly.
