Vegan recipes you must try in the Summer of 22’!

Oat milk:

We all know how important it is for us to drink milk. Since cow milk is an animal product, this works as the perfect substitute for the same. Oat milk is packed with fibre and plant-based protein. It also promotes a healthy digestive system

Serves- 8

  1. Ingredients-
  2. 1 cup rolled oats
  3. 4 cups water
  4. 1 pinch salt
  5. 1 pitted date (optional)
  6. ½ tsp vanilla extract (optional)

Method:

  • Add all the ingredients to your Hafele Cuatro Vacuum Blender.
  • Blend all the ingredients for 30 seconds to 1 minute
  • Drain the mixture into a muslin cloth and squeeze out the milk
  • Serve oat milk immediately or store in a sealed container and keep in the fridge for up to 5 days

Note- Do not blend for very long as that causes the milk to be slimy

Oatmeal Breakfast Cookies

This recipe will definitely turn into your go-to breakfast component.

Ingredients-

  1. 2 tablespoons ground flaxseed + 5 tablespoons warm water
  2. 1 cup oat flour, made from 1¼ cups whole rolled oats*
  3. 1 cup additional whole rolled oats
  4. ½ cup almond flour
  5. zest of 1 lemon, about ½ tablespoon
  6. ½ teaspoon baking powder
  7. ½ teaspoon baking soda
  8. ½ teaspoon cinnamon
  9. ½ teaspoon sea salt
  10. ½ cup creamy natural almond butter**
  11. ¼ cup coconut oil, melted
  12. ½ cup maple syrup
  13. ? cup walnuts
  14. ¾ cup fresh blueberries

Method-

  • Preheat your Hafele Diamond built-in oven to 170-180°C and line a large baking tray with parchment paper.
  • In a small bowl, combine the flaxseed and warm water and set aside to thicken for 5 minutes.
  • In your Hafele Klara Kitchen Machine, combine the oat flour, the additional 1 cup rolled oats, almond flour, lemon zest, baking powder, baking soda, cinnamon, and salt.
  • Combine the almond butter, coconut oil, and maple syrup in a medium bowl and stir well. Add and mix in the flaxseed mixture.
  • Add the wet ingredients to the bowl of dry ingredients and let the Hafele klara Kitchen Machine thoroughly mix it in a consistent batter. Add in the walnuts and blueberries.
  • Scoop ¼ cup of batter for each cookie onto the baking sheet. Bake for 20 to 24 minutes or until the cookies achieve browning around the edges. Cool on the pan for 5 to 10 minutes and then transfer the cookies on to a wire rack to finish cooling. The cookies may fall apart if you take them off the sheet too soon.
  • Enjoy your yummy oatmeal breakfast cookies once completely cool. Also, it can be stored in an airtight container or frozen.

Vegetable stock

Unable to find a vegan vegetable stock recipe? Don’t worry and simply follow.

Ingredients-

  1. 2 medium onions, halved
  2. 4 medium carrots, chopped
  3. 1 to 2 medium celery stalks, chopped
  4. Leek or fennel tops, chopped
  5. 1 garlic bulb, halved
  6. Handful of fresh parsley
  7. 1 small bunch of fresh thyme
  8. 3 bay leaves
  9. 2 teaspoons sea salt
  10. 1 teaspoon black peppercorns
  11. 10 to 12 cups filtered water

Method-

  • Place the onions, carrots, celery, leek tops, garlic, parsley, thyme, bay leaves, salt, pepper and water in a large pot and bring to a boil over high heat on your Hafele built-in Vortex Hob (If 12 cups of water won’t fit in your pot, you can use 10). Reduce the heat and simmer gently, covered, for 1 hour.
  • Strain and discard the vegetables. Season to taste and use this vegetable stock in your favourite soup recipes.
